If you want to uninstall a Joomla 2.5 language pack you should navigate to the Joomla 2.5 admin area ->Extensions -> Extension Manager.
Open the Manage tab. Select Language from the Select Type drop-down menu. Search for the chosen language pack in the filtered results. Select the packages for the Administrator and the Site locations. Find the Uninstallicon in the upper right Joomla 2.5 menu and click on it to completely remove the chosen language pack.
Note that the Joomla 2.5 default English language pack can not be uninstalled.
