Is there any way I can change my Mambo timezone?

You only have to change the Time Offset option within the Mambo settings. Open the Mambo administration panel and from the Site tab at the top goto Global Configuration page. Once your are there, open the Locale tab:

Site --> Global Configuration --> Locale

You will notice the Time Offset drop down menu. This option sets the time offset in hours between the server location and GMT. Select the desired value.
