In order to add a subdomain for testing purposes please log in your Cpanel and follow the Subdomains link. You will be able to add subdomains for all of your domains.
After that go to Fantastico and choose the application you'd like to test. When installing it you will be able to choose the subdomain you have just created.
Please make sure always to choose a strong admin password in order to prevent possible intrusions especially for testing purposes.
