You can enable the thumbnails resize functionality by editing theadministrator/components/com_virtuemart/virtuemart.cfg.php file.
Look for the following lines:
define('PSHOP_IMG_RESIZE_ENABLE', '');
define('PSHOP_IMG_WIDTH', '90');
define('PSHOP_IMG_HEIGHT', '90');
Alter them per your needs. The resize functionality should be enabled in the following way:
define('PSHOP_IMG_RESIZE_ENABLE', '1');
